Ingredients: Sauteed Brussel Sprouts

  • 1 pound brussel sprouts, thinly sliced
  • 1 bell pepper, diced
  • 1 yellow onion, diced
  • 1 tbsp butter (or oil, such as avocado or olive)
  • 1/4 cup feta cheese
  • Salt and pepper to taste

Instructions: Sauteed Brussel Sprouts

  • Heat pan: Heat a large pan on medium-high heat.
  • Prepare vegetables: Rinse the vegetables. Cut off the ends of the brussel sprouts and peel off the outer layers. Thinly slice the brussel sprouts. Dice the onions and peppers.
  • Sauté vegetables: Add the butter or oil to the heated pan. Add the onions and peppers to the pan and cook for 5 minutes. Allow them to caramelize without stirring too often. Add the brussel sprouts to the pan and stir. Cook for 10 minutes allowing the vegetables to continue to caramelize by stirring infrequently.
  • Add feta cheese and serve: Once the vegetables are caramelized and tender, remove the pan from the heat. Season with salt and pepper to your taste. Add the feta cheese and stir, allowing the feta to melt a little. Serve immediately.
